Air Canada 320 or 763

NY to Ottawa in J class, All flights are A320, but one is B767, what would you hang around to almost the last flight of the day for the 767?
 
I think you need to consider several things.

First, what time of year are you flying, are you likely to experience delays? If so, choosing an earlier flight (with flexibility to ultimately leave later) is better than choosing a later flight and spending the night at the airport.

Second, do you have a preference between twin-aisle and single aisle?

Third, the 767 will have seats that recline flat. They're also at an angle. The A320 is more like a recliner that you'll find on VA or QF on their B737's. I don't know the flight time but can't imagine it's that long that you'll want to sleep flat?
 
Does it really matter for a flight that should be less than an hour?

Pick the time that suits you best IMO

Only a 1hr flight, probably not enough time to have a snooze :-)

Flight is not direct, so you have a E75 to Toronto and the 763 to Ottawa.

Clazgirl is scared of flying so she would prefer the biggest aircraft possible, which the 763 wins hands down.... the E75 will cause me a broken hand

Good enough reason. The 763 will have a proper international seat anyway.

As a regular flyer in Canada, I'd say that was the key consideration. I would never choose the last flight of the day actually any time of year, but especially in winter. I know you have other considerations, but a cancelled flight might be worse ...
