What is the best way to add info to a post, edit the post to include the new info, or create a new post?

You can change a post in the first 24 hrs after your original post. That is what I would normally do and if it's outside the 24 hrs I would create a new post.

It all depends on the situation. Obviously if there has been a reply then its probably best to add a new post. Generally, if its a very short period of time then its ok to edit. but people who have already read the original post will unlikely see the new update.
