Adding a member to your bookings

So I have booked a number of Hilton Hotels in the US for next year, if my wife joins as a member can I add her to the reservation so she also gets points or do they treat this as double dipping and not allowed.

You can however add your wifes name to the booking if she needs to check-in without you. No additional points for her however double dipping is a feature of HH. You (as the HH member) can add your double dipping preference in your HH profile to either base points + bonus points or base points + bonus miles.
