This might just be me, but it bugs me when I have to flag down a server just to get a glass of water or orange juice. I sometimes feel like the hotel has deliberately chosen to remove these things from the buffet so that you have to be “served” - and then are expected to therefore leave a tip.

Not sure about the answer to your second question, but yes the drinks would also be double catered. I wouldn't expect ice to be available on the return leg.

All the aviation charter and the ombudsman really does is make it easier for airline customers to enforce rights they mostly already have under existing Australian laws. I don’t understand how the airlines can be against this, but you can’t blame them for trying, I guess.

This seems to more-or-less match what VA offers when you book a Choice fare, no? Except that Gold members can get access to the extra-legroom seats for free once online check-in opens, which isn't the case on VA. I don't think QF would charge for all seat selection as long as VA doesn't.
