SQ Catering - especially on overnight flights

I am currently using (mainly) SQ for a J Class RTW and earlier this week flew AC from SFO-YUL - a 1300 departure of around 6 hours duration. There were 12 people in business and lunch was offered at any time between departure to 1 hour before arrival. I do appreciate it is less extensive than a full SQ meal service but that's my issue.

Last night on SQ 25 - the JFK to FRA 380 service, the flight departed at 2100 and lasted a quick 6h40m. Most J pax eat dinner in the lounge before boarding judging by the number who converted the bed and used the restrooms as soon as the seat belt sign was turned off.

Why then do SQ offer a full 5 or 6 course meal service with all the trimmings after departure and only a fruit and pastry service into FRA when many pax were awake and maybe looking for breakfast. They did not even offer the typical Australian overnight catering of an either/or meal service with hot options on take off or prior to arrival.

The Senior in J only commented that every SQ catering plan is based on the scheduled departure time. I content that, at least in the premium cabins, a flexible option or a service more aligned to the arrival time of the sector would be a better option. Does anyone else have the same opinion?

It did not help that one of the few people having every course of dinner and tasting almost every wine had the seat next to me in the forward J cabin for over 2 hours. Not the best SQ flight I have taken.

SQ has some quirky catering 'rules'. A while ago they were offering restaurant vouchers for the midnight departure out of Shanghai to SIN and taking up this offer many people had eaten by the time of the flight. But they insisted on offering a full supper immediately after take-off and absolutely nothing for 'breakfast' pre-arrival 5 hours later.
