Travelling with one other that needs lounge entry so can come in with me, can I use one of my aquired lounge passes to get two non travellers in the Virign lounge with us?

You should be able to use them as long as they haven't expired.

I received 2 recently when I dropped to Silver but now back at Gold and the lounge entries are still showing.

If you're silver, each lounge pass is for one person, which means you can use it for a guest or yourself.
If you're gold/plat, it can be used to add to your guest allowance.

As long as your guest or the lounge pass holder is flying, it's valid for use to access the lounge.
