Some guidance please, I have tried looking up information on qantas.com and elsewhere but was unable to find any.

1. Gold Points Benefit - QF states that Gold gets 75% additional points for eligible travel. Does Discount Economy count ? I have completed few trips in Discount economy between SYD and BNE, but have only been given 800 points each, I was thinking it will be 1200.

2. SC earn on Cathay & EY - I understand QF no longer flies to India. However, if I fly from HKG / DXB to DEL on Cathay metal, do I still get the SC ?

1. On shorter domestic flights in discount economy the bonus gets you to the same level (or less than) the minimum points guarantee. Have a look at your activity statement. You start to see a benefit from the status bonus in higher classes and/or on longer flights.

2. Have a look at the points calculator and earnings tables etc. CX flight numbers earn at lower rates than QF flights numbers. As for EY that's not a Oneworld airline so I don't think you'd earn anything.
 
The QF points earn on SYD-BNE is only 400 in discount Y and with the 75% gold bonus it would have been 700 total. However, the minimum points guarantee is 800 so that is why you received 800.

Only certain CX fare classes earn QF SC/points so be careful. You do not earn QF SC on any EK flight numbers (must be QF codeshare).

Provided you are in an eligible fare class, you will earn points and SCs for oneworld and partner flights as outlined in the partner earning table. Not all cub-classes of economy are eligible, and for some carriers such as MH you'll only earn economy levels even if travelling in premium cabins.

You need to watch Cathay flights as there's a bunch of cheaper fares that don't earn (and choosing a fare that earns points may not be worthwhile from a $$ perspective).

For SC earn, the qantas calculator does not list anything for India travel (destinations dont show up, was hoping it will be like VA earn flying SQ type thing, 100 SC return)..

They do show! You go to the points calculator and break it sector by sector. For example HKG-BOM, select CX as the carrier, and it gives you the points and SC earn for the range of fares.
 
Note EY is Etihad and EK is Emirates. Neither is a OneWorld airline. QANTAS is partnered with Emirates so you will get a much lower serving of points and no SCs flying Emirates. Flying Etihad you'd need to credit to a different frequent flyer program assuming it doesn't have a OneWorld flight number.
