Will be in Mauritius in April 2020 (Seychelles as well) - it's around Easter so will be high season. We've booked the Westin (3 nights) and still plan to book the St Regis for 3 nights and (not Marriott) the Shangri-La for 3 nights. What is very frustrating is trying to decide which "packages/add ons" to book (e.g. half/full board or Club room or higher room types which have additional benefits) - the websites are totally lacking in detailed information on these matters (eg the half-board package really only adds dinner as breakfast is included with all rooms but it does not indicate which restaurant(s) and/or menu restrictions are included - reading TripAdvisor there are many complaints about half-board being very restrictive) - it's very hard to find e-mail addresses for the hotel(s) and if you do - the responses to questions just re-state what limited and confusing information is on the website).

Also - again on Tripadvisor there are many complaints about hotel restaurants being full booked (or only very limited times available) - but there is no way via the websites to book restaurants in advance (Marriott properties on other countries do have links to restaurant bookings). Any advice? Once room bookings are finalised I will try Facebook - we have tried calling the hotel(s) to ask questions but the person answering the phone usually had limited English and seems to have difficulty understand straightforward questions. Promises to send additional information by e-mail have not been followed through.

All advice and first hand experience most welcome.

I haven't been to those places myself, but as far as the Shangri-La is concerned, I would recommend booking the Luxury Circle rate (available online via classictravel.com or certain luxury travel advisors) which should come with free breakfast, an upgrade, late check-out, welcome gift and USD$100 spending credit). Also, most Shangri-La websites let you book restaurants online or at least show the restaurant email so you can contact them directly to arrange accordingly.
