There are so many wineries in the areas you are going, in no particular order, and these are just the few I liked when visiting, but there are lots of others:
In the Tamar I like:
Stoney Rise - Chardonnay & Pinot Noir
Janz - Sparkling
Delamere - Chardonnay, Sparkling & Pinot Noir
Loira Vines - Chardonnay
Wines for Joanie - Pinot Noir
Tamar Ridge - everything but very commercial - includes Pirie
Clover Hill - Sparkling
Bay of Fires - Chardonnay, Sparkling & Pinot Noir - (Arras)
Moores Hill Estate - Chardonnay, Sparkling & Pinot Noir
Swinging Gate Vineyard - love visiting the CD - wines not as much
Josef Chromy - not been but heard good things
Cole River Valley:
Pooley - Chardonnay, Riesling & Pinot Noir
Domaine A - Cabernet, Sauv Blanc, Bandeaux Blend
Puddleduck - not been but heard good things
Meadowbank - not been but heard good things
East Coast:
