First time booking SQ J redemption ticket noob questions

First of all, i would like to thank this community for answering some SQ questions which i had over the last year.
Finally i am going to reserve my first ever J redemption ticket with SQ. (By the end of this month probably)

My questions :

At this stage, i am looking at departing for AMS from MEL around June 18th 2018.
Looking at returning around a month later in July 2018.

Since redemption bookings for July 2018 will not open until next month, should i just
book the outbound flight first to AMS ? And then come back next month to book the return journey back to MEL for July 2018?
I know i can wait till next month to book the return flight all together, but i notice that AMS is a very popular destination
and summer is the peak season, so i am worried that the flights for June and July 2018 will be booked out if i wait till next month
to book.

Out of curiosity, is it easy to change flight dates during a European summer ? (Say if i decide to stay longer in Europe)

I would like to hear from members who have booked redemption flights with SQ, especially those who have flown to Europe
during the Euro summer period, on how you all go about booking your flights etc. (How far ahead do you book, how do you set your return dates etc)

Just make 2 seperate bookings - outbound as soon as you find suitable flt then inbound when you find suitable flt. Total pts and fees exactly same for 2 x seperate o/w bookings as compared to 1 ret booking.

You should book flts as soon as you decide on dates and find availability - cancellation cheap - date changes are simple and straightforward provided you can find availability.
