I've never had trouble getting 4 x J savers with SQ (albeit flying out of Brisbane). One of the quirky things with SQ I've discovered is award availability seems to increase closer to departure date. For instance SQ246 departing tomorrow (29th January) has 4 x J savers. Waitlist is your friend...

For 4 nights I'd stay at Denarau. Lots of options as others have suggested. The offshore islands are definitely nicer but you'd lose the best part of a day in travel (unless you splurge on the chopper transfer).
