Must do restaurants or bars in HKG ?

Recommendations please AFFers. My boss is very well travelled but has never been to HKG and is looking for your top picks. He will only be there for 4 days so wanting to make the most of it. Budget is not an issue.

@amaroo made a typo in their list (I think) and meant Lung King Heen rather than Lung Keen Heen. Not to be confused with Tin Lung Heen, Yan Toh Heen or Yee Tung Heen :-/ Highly recommended.

I don't go to Hong Kong to eat Parisian-style haute cuisine, so for me Amber, Caprice and Petrus aren't on my list. If I want that I will go to Paris. (If I lived in HK and didn't travel it would be different. Same with all the bistros in SoHo).

Yung kee is great fun, especially for a family. It's most famous for its roast goose. Lung King Heen is probably the best Cantonese restaurant in the world but T'ang Court gives them a fight (and has better views).

My off-Michelin list that for me are better than the 1*s are The Chairman, Tasting Court, and Hong Kong Cuisine. If you contact Tasting Court, they will tailor a menu for you. Also Seventh Son is an offshoot of the starred cough Lam Moon and I feel their kitchen performs better (and cheaper).

Man Ho in the Marriott has new chef and is on my list but haven't been yet.
